Parsley Butter
Simple to make and great with fish

- blender or mortar and pestle
- Baking paper or tin foil
- Chopping board
Ingredients
- 200 g Butter
- Small bunch Fresh parsley
- Quarter Lemon – For juice
Instructions
- Cut butter into cubes
- Remove parsley leaves from stalks and chop (chop very fine if using a mortar and pestle)
- Add to blender or mortar along with a squeeze of lemon juice
- Blend until well mixed
- Add the parsley butter to a piece of greaseproof paper and wrap and roll it, twisting the ends tightly to form a sausage shape
- Chill for about half an hour until set and then slice into rings
