It’s that time of year where you want to cosy up by the fire and enjoy the flavours of autumn – and what better choice of dessert than a Pecan Slice Cake? This has become an instant favourite in our house – why don’t you give it a try? So very simple to put together, and very delicious!
Ingredients:
4 Eggs
200g Granulated Sugar
170g / 6oz Honey
250ml Olive Oil
180g Plain Flour
1½ tsp Baking Powder
¼ tsp Salt
1 tsp Vanilla Essence
200g Chopped Pecans
Instructions:
- Pre-heat oven to 180°c. Lightly grease glass cooking dish with oil.
- In a bowl, mix eggs, sugar, honey and oil until smooth.
- In a separate bowl, sift flour and stir in baking powder and salt.
- Gently stir flour into egg & sugar mixture. Add vanilla essence.
- Mix in 150g of the pecans.
- Pour into glass baking dish.
- Evenly top with remaining (50g) pecans.
- Cover dish with aluminium foil.
- Bake for approx. 45-60 mins (remove foil when 20 mins remains to brown), or when skewer comes out clean.
- Allow to cool slightly. Then, while it is still warm, use a knife to separate cake from dish edges and tip it out.
- Allow to finish cooling before cutting & serve.
