Pecan Slice Cake

It’s that time of year where you want to cosy up by the fire and enjoy the flavours of autumn – and what better choice of dessert than a Pecan Slice Cake? This has become an instant favourite in our house – why don’t you give it a try? So very simple to put together, and very delicious!

Ingredients:

4 Eggs

200g Granulated Sugar

170g / 6oz Honey

250ml Olive Oil

180g Plain Flour

1½ tsp Baking Powder

¼ tsp Salt

1 tsp Vanilla Essence

200g Chopped Pecans

Instructions:

  1. Pre-heat oven to 180°c. Lightly grease glass cooking dish with oil.
  2. In a bowl, mix eggs, sugar, honey and oil until smooth.
  3. In a separate bowl, sift flour and stir in baking powder and salt.
  4. Gently stir flour into egg & sugar mixture. Add vanilla essence.
  5. Mix in 150g of the pecans.
  6. Pour into glass baking dish.
  7. Evenly top with remaining (50g) pecans.
  8. Cover dish with aluminium foil.
  9. Bake for approx. 45-60 mins (remove foil when 20 mins remains to brown), or when skewer comes out clean.
  10. Allow to cool slightly. Then, while it is still warm, use a knife to separate cake from dish edges and tip it out.
  11. Allow to finish cooling before cutting & serve.
