Griddled Prawns

A family favourite that is easy and when prepared in advance super speedy to serve!

Equipment

  • Plastic zip lock bag or container with a lid
  • Grater
  • Chopping board
  • griddle pan
  • Hob

Ingredients

  • 1 kilo Shell on Prawns
  • Fresh Ginger Thumb sized piece
  • 2 cloves Garlic
  • Splash Fish sauce or Worcestershire sauce
  • Salt and Pepper
  • Pinch Chili Flakes (Or Cayenne Pepper)
  • 5 tbsp You need a couple for the marinade and some for frying
  • Optional - A pice of fresh Lemon Grass chopped or a sprinkle of dried Lemon Grass
  • 1 Fresh Lime - Juice and zest
  • Sprig Parsley torn up for decoration when serving (Optional)

Instructions

  • Grate the ginger and garlic and juice and zest the Lime.
  • Add 2 table spoons of olive oil and all the other ingredients to a plastic bag or container and sit in the fridge for at least a couple of hours.
  • Heat a griddle pan until hot, add 2-3 tablespoons of olive oil, and once the pan is hot, add your prawns making sure you include the ginger etc. Cook one side and then turn. The large prawns I used for this took a total of 10 minutes (5 mins each side). Smaller ones should be done in around a total of 4-6 minutes.
  • Leave to stand for a minute and then serve along with lots of napkins as it gets a bit messy!
